Love this recipe. It’s simmering as I type. The oil has separated nicely. Should I spoon it out? Lemongrass was only available as ground up in a spice bottle. Had to guess the quantity. We had minced garlic in a jar already, but again, had to guess the quantity. Can’t have too much garlic, so no big deal. Nice excuse to use the good mortar and pestle we’ve had for a while.

It’s the best curry I have ever eaten or made. It’s super tasty 😋 and everyone love it. I made it over 10 time the last year. I use chicken thighs and they are super soft and they just fall apart yummy
I can’t recommend enough and I am struggling to go and look for another recipe for different curry as my family are obsessed with it thank you Stephanie.

I’ve made this many times. I use a combination of the suggested curry mixture and a bit of AROY D yellow curry paste. I steam the potatoes rather than poking them in the curry. This cuts down on added starch and allows the pre-dinner drinks to flow without fear of overcooking the potatoes.
