Made the gunpowder potatoes last and truly amazing !! Tonight its the chicken ruby and my chicken has been marinating for 6hours and just grilling it now , using tinned chopped tomatoes 🍅 instead of fresh , love trying new recipes and both were recommended by my eldest son after eating at Dishoom .. wish me 🍀 luck

In reply to John.

I like to take half of the sauce and blend it down add a little more cream and then fold the rest of the sauce through- add a knob of butter to add a gloss to the sauce

you can definitely make it a few hours in advance and then reheat when the chicken is ready. as for the cream, yes, adding during reheating is best!

Recipe looks amazing, I’m making this for friends over the weekend. Can the sauce be made a few hours in advance? Then reheated when the chicken is ready? Would you add the cream at this reheating stage?

Made this and brought it to work to eat on break. I got several comments about how good it smelled! Tasted lovely too :)

Cream doesn’t freeze well, the texture breaks down and becomes grainy, if I remember right. Just divide before adding the cream and freeze half. Then, add 1/8 c cream to the half of the curry you’re eating that night. When you’re ready to eat the other half of the curry, add 1/8 c cream to that curry after thawing and reheating.

Can’t wait to cook this tomorrow. Was cooked for us last week by family in the Lake District. It is insanely delicious and memorable. We said ‘mmm’ dozens of times.
Excellent food.

Very excited to try this and add to my repertoire!! As someone who lives on their own, I do a lot of batch cooking to get me through the mid-week slump, so I’m always keen to find things that freeze. I’ll be wanting to cook this either way, but just wondered whether anyone’s tried freezing this or knows whether this holds up in the freezer?

John you must remember, you can never have a first ruby chicken again, no matter how hard you try… it will never be as good as it was the first time.

I haven’t had the pleasure of dining at Dishoom so I have no comparison to make of the restaurant dish. That said, this is hands down one of the best curry dishes I’ve made at home. Absolutely delicious and it comes together very easily.
